Purée de Légumes
Ingredients you will need
- 1 Sweet Potato
- 1 bunch of celery
- 1 turnip
- 1 parsnip
- 1 carrot
- 1 bay leaf
- 2 onions
- sprig of parsley and thyme
- 1 Irish potato
- 2 tablespoons Of flour
- 1 large tablespoonful of butter
- 3 1/2 quarts of cold water
- salt and pepper to taste
- a little bit of rich cream/ gill cream or hot soup
Into five size cut the vegetables and until thoroughly tender, boil the vegetables in about 3 1/2 quarts of water . To reach thoroughly tender texture and consistency, this should take about 2 hrs. ⏲ Press the vegetables through a sieve. Place the remaining water back into pot and bring contents to a boil. Add butter and smoothly rub with flour in a small amount of rich cream or hot soup. Right before serving to enhance the flavor. For 2 or 3 ⏲ minutes longer, stir and boil the vegetables then serve.
